Ethel’s Fancy is a modern Californian cuisine from a Japanese-American kid
from Hawaii, who just happened to work in some of the best restaurants in
America. 

The “kid” in question is chef Scott Nishimaya, who honed his culinary
skills at the likes of Daniel, Chez TJ, and the French Laundry before setting out
on his own. With this new venture, Nishimaya is turning to the cooking of his
childhood in a tribute to his mother and grandmother—both named Ethel.
Ethel’s Fancy menu is “izakaya-style” with a focus on California ingredients. The
cooking techniques and inspiration comes from French, Italian, and Asian
cuisines, a blend that reflects Scott Nishimaya’s culinary experience and identity.

Tobias Glen Vineyard is located in the heart of Russian River AVA, producing
award winning Pinot Noir, rosé of Pinot Noir, and a Chardonnay from Hyde
Vineyard in Carneros.

